

Asparagus soup with smoked salmon
Asparagus soup is deliciously creamy and full of flavor. This classic with smoked Fish Tales salmon is a must-have on your recipe list for asparagus season!

Wash the asparagus and trim the ends. Peel the asparagus. Bring a pot of water to a boil and cook the asparagus for 5 minutes. The cooking time depends on the thickness of the asparagus. Then let them rest in the hot water for another 10 minutes.
Remove the asparagus from the cooking liquid and cut them into large pieces. Add a bouillon cube to the cooking liquid for extra flavor.
Melt the butter in a pan. Stir in the flour and let it cook briefly. Add a ladle of warm broth and stir well. Continue this process until all the broth is incorporated. Pour in the cooking cream and let it simmer for a moment. Check the consistency of the soup—if it’s too thick, you can add a bit more cream.
Finely chop a few sprigs of chervil and add them to the soup along with the asparagus pieces. Heat the soup thoroughly and season with salt and pepper. Slice the salmon into strips. Serve the soup in a bowl and garnish with the salmon and a sprig of chervil.
