

Ceviche with tuna, onion, avocado, and cilantro
Ceviche is a delicious, fresh fish dish from Latin America. Simply put, it consists of fish pieces marinated in a tangy citrus mixture. Traditionally, raw fish is used, but canned tuna also makes an excellent ceviche. Any type of chili pepper can be used for the marinade—just make sure to add some heat! Enjoy!
Place the red onion in a bowl with the juice of 3 limes and let it sit for at least 20 minutes.
In a separate bowl, mix the avocado, corn, and green chili pepper with the remaining lime juice, lime zest, and a bit of olive oil. Season with salt and pepper to taste.
Add some of the pickled red onions and divide the salad over two plates.
Carefully place a few pieces of albacore tuna on each serving and drizzle with olive oil. Garnish with cilantro leaves and serve.
