

Potato-rosti-with-salmon
Potato Rösti with Salmon. The classic salmon toast, but with a twist using potato rösti. Perfect for appetizers!
For these rösti, you can use wild salmon, Atlantic salmon, or simply mix and match for the best of both!
Place the grated potatoes in a sieve and squeeze out the excess moisture.
Place them in a large bowl, then add the egg and flour. Season with salt and pepper to taste.
Heat the oil in a frying pan over medium heat. Spoon generous tablespoons of the potato mixture into the pan and flatten them slightly with a spatula. Cook for 1-2 minutes on each side until crispy and golden brown, then drain on paper towels. Repeat with the remaining potato mixture and let them cool slightly.
For the crème fraîche, add the juice of half a lemon and season with salt and pepper to taste.
Spread a dollop of crème fraîche on each rösti and top with smoked salmon and fresh dill. Season with freshly ground black pepper. Done!
