Vitello tonnato is a classic Italian dish that combines cold, thinly sliced veal fricandeau with a creamy tuna sauce. This surprising combination of meat and fish is fresh, flavorful, and perfect for sharing!

For the tuna, you can use either skipjack or albacore tuna.
Puree all the ingredients for the tonnato sauce with an immersion blender until smooth. Add salt and pepper to taste.
Cover a large flat plate with the slices of roast beef. Generously spread the sauce over the roast beef and sprinkle the arugula on top.
